Founded in 1986 by Carlo Petrini, Slow Food works to promote interest related to food as a bearer of pleasure, culture, traditions, identity, and a life- as well as food- style respectful of territories and local traditions. 
 
The motto of Slow Food is good, clean and fair. Three adjectives that describe simply the characteristics that food must have. Good concerning to the sense of pleasure derived from the organoleptic qualities of a food, but also the complex sphere of feelings, memories and identity implications resulting from the affective value of food; clean, therefore produced respecting ecosystems and the environment; fair, meaning food is in line with the concepts of social justice in production and marketing environments.

Italian Association of Sommeliers

The association is a non-profit organization and has the primary purpose of classifying the profession and the figure of the sommelier and to enhance the culture of wine within the restaurant industry. Therefore it carries out every activity, cultural, educational and editorial, to propagate the knowledge and consumption of wine and other alcoholic beverages and to enhance Italian food and wine in Italy and abroad, taking care directly, and in appropriate locations, of the professional preparation of sommeliers and teaching staff.
